Pancake Tuesday, Episode 2

Episode 2 of my new season of cooking demonstrations on YouTube is launched tonight.
Episode 2
 This episode covers Gluten Free cooking - shortstack pancakes with strawberries. In this episode we learn why most gluten free recipes use weights rather than other forms of measurements.

Shortstack pancakes
Makes 8-10

• 150 g gluten free self raising flour;
• 80 g white rice flour;
• 85 g castor sugar;
• 40 g buckwheat flour;
• 300 ml milk;
• 2 eggs lightly beaten;
• 60 g butter melted;
• additional butter for cooking,

• Shredded Coconut lightly toasted
• Chia seeds
• Punnet of strawberries

Sift together flours. Stir in the sugar. Whisk together milk, eggs and butter. Make a well in the centre and add the milk mixture. Whisk until smooth. Allow batter to rest for 5-10 minutes

Lightly grease a non stick pan with butter. Pour in approximately 1/4 cup of the batter. Gently fry until bubbles appear on the top. Flip pancake and cook for a minute until brown. Remove from pan and keep warm whilst cooking the remaining pancakes.

To serve:
Wash and hull strawberries, slice in half. Place in pan, with 1 tbl water.
Gently cook until syrupy.
Plate up pancakes. Pour strawberries over pancakes and sprinkle with chia and coconut.
